Vegan french toast sticks you'll want to keep dunking long after breakfast is over

You may be surprised how easily you can make delicious french toast sticks without using any eggs or dairy! If you love french toast, or have warm memories of eating french toast sticks as a kid, you'll love this recipe.

The breads we used in this recipe are from two different Philly bakeries— the French Toast Loaf from Merzbacher's of Germantown and the San Francisco Style Sourdough & Pain au Levain from Metropolitan Bakery! Although pretty different texturally, all three of these breads were still dense enough to hold up beautifully in the process of becoming french toast sticks. Try these different breads as french toast sticks for yourself!

Sticks– arguably how to get the most out of your french toast

Ingredients:

1 loaf of Philly-made bread
2/3 cup cashews
1 1/2 cups filtered water
1 1/2 tbsp tapioca flour
2 tbsp cornstarch
1 tsp nutritional yeast
vanilla extract
apple cider vinegar
1/8 tsp cinnamon
1 tsp baking powder
1 tsp sugar
1/8 tsp salt
sunflower oil or vegan butter, for frying

dip suggestions:

maple syrup
non-dairy whipped cream

Instructions:


  1. Cut loaves or slices of bread down into desired french toast stick size and set aside.

  2. Boil cashews for 5 minutes, then allow them to soak in hot water for 10-20 minutes.

  3. Add cashews, filtered water, tapioca flour, cornstarch, nutritional yeast, vanilla extract, apple cider vinegar, cinnamon, baking powder, sugar, and salt to a blender. Blend on low for 1 minute or until completely smooth. Pour the liquid into a dish large enough to dunk the bread sticks into.

  4. Heat a frying pan over medium heat. Once hot, add oil or vegan butter evenly to bottom of pan.

  5. Lay the sticks into the liquid several at a time, dunking and flipping them to evenly soak up liquid.

  1. Place your french toast sticks into the hot pan. Don't try to flip until you see the edges browning, or else they may stick to pan. Cook for 2-3 minutes on each side and remove once all sides are browned.

  2. Add more butter or oil to the pan before adding an additional batch of sticks to the pan.

  3. Serve alongside maple syrup and non-dairy whipped cream, or another dip of choice. Dip french toast sticks and enjoy!
