F*ck, That's Vegan?! #10

10. "Make it Extra Cheesy, Pleasy"

Can't we all admit to some shameless late night munching every so often? Pizza? Hoagies? Fries? Maybe you've even been on some 2AM trips to Taco Bell for Cheesy Gordita Crunches (always with extra cheese) like Action Bronson. They made it into F*ck, That’s Delicious for being a perfect combination of soft outer layer, gooey cheese, and crunchy inside, but obviously are not vegan. Luckily there's an FTV?! version you can make at home, so wrapping up the night (or early AM) with a Cheesy Gordita Crunch is no longer out of reach! When you make these, don't forget to eat them as ravenously and rabidly as possible, as suggested by Bronson.

Taco (or gordita crunch) time!

Cheesy Gordita Crunch Ingredients:

6 inch flour tortillas
crunchy taco shells
vegan cheese, shredded or homemade
vegan taco meat
lettuce, shredded
tomato, diced
spicy ranch*
hot sauce of choice

*There are vegan ranch sauces at some grocery stores, or use this recipe to make a pretty healthy homemade spicy ranch!

Taco Meat Ingredients:

1 1/2 cups TVP (textured vegetable protein)
1 cup mushroom broth
1 tbsp red wine vinegar
2 tbsp soy sauce
1 1/2 tbsp tapioca powder or cornstarch
3-4 tbsp nutritional yeast
1 tbsp onion powder
1/2 tbsp salt
1 tbsp ancho chili powder*
2 tsp garlic powder
1/4 tsp cocoa powder
pinch of cinnamon
1/2 tbsp smoked paprika
1 tsp dried oregano
1 tsp dried cilantro
1 tsp coconut sugar
cooking oil

*all spices down to coconut sugar can be substituted for 2 1/2 tbsp chili powder or taco seasoning mix

Instructions:

Heat liquid ingredients together (besides cooking oil). Pour hot liquid over tvp, mix, and allow to sit for 15 minutes. Mix spices into hydrated tvp. Heat a pan over medium heat. Add cooking oil, then tvp. Sprinkle tapioca or cornstarch over tvp, and mix in while cooking. Add extra broth if too thick. Allow taco meat to brown by only mixing every few minutes. Cook for 10-15 mins total.

Cheesy Gordita Crunch Assembly:

If using shredded cheese, toss flour tortilla into a hot pan and allow desired amount of cheese to melt. If using homemade cheese, spread on tortilla prior to heating.

Fold cheesy flour tortilla around bottom of prepared hard taco shell. Fill shell with extra cheese, taco meat, lettuce and tomato. Top with spicy ranch and hot sauce.
