A rich, vegan-friendly coffee experience

Have you been searching for a way to experience the richness of Vietnamese egg coffee as a vegan? This recipe is meant to help you get a couple steps closer!

The recipe uses Càphê Roasters Vietnamese Espresso Blend, the blend they recommend for making egg coffee on their website. Càphê Roasters is Philly's only Vietnamese specialty coffee roaster!

Whipped aquafaba and sweetened condensed coconut milk are used to create an egg custard substitute that complements the intense coffee surprisingly well. Give this recipe a try and see for yourself!

Ingredients:

4 tbsp ground Càphê Roasters Vietnamese Espresso Blend
250 ml boiling hot water
1/3 cup aquafaba
1 tbsp sweetened condensed coconut milk
pinch cream of tartar

Instructions:


  1. Boil water. Portion out 250 ml for brewing coffee.

  2. Brew the coffee. For best results, use a phin (a Vietnamese coffee filter that you can actually buy from Càphê Roasters!!). If you don't have one on hand, here's a method that worked for me:

    Layer a coffee filter between 2 stacked mesh strainers and set over a bowl. Pour enough hot water through the strainer to soak the filter. Dump water and wipe excess out of the bowl after.

    Add your coffee grounds to a small dish. Pour 1-2 tablespoons of boiling hot water evenly over the coffee grounds and allow to bloom for 30 seconds.

    Scrape bloomed coffee grounds into the top strainer. Pour the rest of the water evenly and somewhat slowly over the coffee.

    Allow 3-4 minutes for all water to pass through the coffee filter, then remove your stacked strainers.

  1. Whip together aquafaba and cream of tartar with a hand mixer until aquafaba has transformed into a fluffy foam. This could take up to 10 minutes.

  2. Gently fold the sweetened condensed coconut milk into the whipped aquafaba as you drip it in a little at a time. Test that the mixture will float by dropping a little from a spoon into water.

  1. Pour your brewed coffee into a mug. Spoon the whipped aquafaba and sweetened condensed milk mixture onto the coffee.

  2. Stir the topping into the coffee and sip up!
